From olives harvested by hand in the second decade of October in the Offida area, in the province of Ascoli Piceno, this organic oil is obtained through the pressing process within 12 hours from harvesting. With a three-phase cold extraction system, the oil has a very fluid consistency and an intense bright green color from filtering. The scent is of average intensity, with particular hints of almond and herbaceous green. The bitter and spicy taste is balanced, the olfactory fragrances stay on the palate.
