Sargano is a cultivar from the Marche region that is particularly widespread in the Fermano area. The harvest takes place in November due to the particular characteristics of the drupe, very small and ellipsoidal in shape. The taste is medium fruity, with an almond aftertaste. The spiciness and bitterness of this oil are of medium intensity. Good content of polyphenols and chlorophyll, low content of oleic acid around 71%, high content of linoleic acid around 11%.
