The olives from which this product derives are hand-picked and pressed within the next twenty-four hours. The oil extraction is carried out in cold and with mechanical procedures. The varieties used are Leccino, Ascolana Tenera, Frantoio and Moraiolo, typical of the Marche hills. Its flavor is a mixture of leaf, artichoke and green almond, slightly spicy and bitter. Its delicate flavor goes well with any type of dish.
