From a native vine of Ascoli hinterland, where grapes are harvested in mid-September, Pecorino Saladini Pilastri finds an ideal environment. It has an early ripening and prefers medium-high cool hills and strong thermal excursions. After meticulous work in the cellar, the wine obtained is of great structure and thickness. Sapid and mineral notes with citrus nuances give character to this demanding wine that offers very high potential. An excellent white that is perfect with refined cheeses, fine white meats and typical Adriatic fish dishes.
